Welkom op dit Italiaans-Amerikaans pastafeest met een Russische unexpected guest. Disco pasta werd in de jaren tachtig in Amerikaanse nachtclubs geserveerd, en heeft sindsdien niet aan populariteit ingeboet. Recent onderzoek toont aan dat het, na spaghetti bolognese, het meest gegoogelde pastagerecht is.
Voor de premium versie: voeg een beetje mascarpone toe aan de saus, meng er nduja onder, plaats enkele minuten onder de grill en werk af met burrata.

Welcome to this Italian-American pasta party with a Russian unexpected guest. Disco pasta was served in American nightclubs in the 1980s and has not lost any of its popularity since. Recent research shows that, after spaghetti bolognese, it is the most Googled pasta dish.
For the premium version: add a little mascarpone to the sauce, stir in some nduja, place it under the broiler for a few minutes, and finish with burrata.

1 onion

1 garlic clove

1 chili pepper

2 tbsp tomato paste

3.5 tbsp butter

¼ cup vodka

1 cup heavy cream

4 oz Parmesan

1 lb penne
-
handful of fresh basil leaves
1. Peel and finely chop the onion and garlic. Melt some butter in a pan and sauté the onion and garlic. Halve the chili lengthwise, finely slice it, and cook it along with the onion and garlic for a few minutes.
2. Add the tomato paste, cook it briefly, and deglaze with the vodka.
3. Add the cream and add a few torn basil leaves to the sauce. Let it simmer for 5 minutes, stirring regularly.
4. Cook the pasta al dente. Reserve some of the cooking water.
5. Add the pasta to the sauce. Add some of the reserved cooking water. Add part of the grated Parmesan and the remaining butter. Stir to combine.
